Makes 1 pizza.

INGREDIENTS

1 NAAN bread

2 tbsp. onion and cranberry confit @canneberge

4 slices Tomato

4 fresh mozzarella

1/4 cup pitted Kalamata Olive

1/3 cup marinated artichoke

50ml              Maple Balasamic Vinaigrette   @cranberry

Ground peppercorns

Flower of salt

Basil leaves

For a vegan version: Replace the fresh mozzarella with vegetable mozzarella.

PREPARATION
Preheat the oven to 425 F.
Place parchment paper on a baking sheet. Spread the onion and cranberry confit on the naan bread.

Cut the tomato into slices and spread them over the pizza. Use your fingers to tear pieces of fresh mozzarella then spread them over the pizza. Add the marinated artichokes. Add the fleur de sel and ground pepper.
Bake in the center of the oven for 15 minutes or until the cheese is melted and toasted to your liking.
Remove from the oven, add the basil leaves then add a drizzle of maple balsamic vinaigrette.
