INGREDIENTS

  • 400 g Beef, choose: inside round
  • 2 slices cooked and chopped bacon
  • 2 tsp chopped dill pickle
  • 2 tsp Japanese mayonnaise (kewpie)
  • 2 tsp chopped French shallot
  • 2 tsp chopped roasted almonds
  • 1 tsp Sambal oelek
  • 1 tsp Capers
  • 1 tbsp NUTRA-FRUIT Dijon-style cranberry mustard
  • 1 tbsp NUTRA-FRUIT Cranberry Onion Confit
  • 3 tbsp NUTRA-FRUIT Cranberry Maple Balsamic Vinaigrette
  • Fleur de sel and pepper from the mill to taste

TECHNICAL
Finely chop the beef. In a large bowl, mix all the ingredients with the beef. Adjust the seasoning.

SERVICE
Serve cold with a salad enhanced with our Cranberry Maple Balsamic Vinaigrette.

Use a cookie cutter for a nice presentation. Decorate with a slice of pickle.
