Yield: Makes 12 Muffins
INGREDIENTS
- 1 1/2 cups flour
- 1 tbsp. Baking powder
- 1 tbsp. Cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- the zest of an orange
- 1 pinch of salt
- 3/4 cup Chocolate Covered Cranberries, halved
- 1 egg
- 2 tbsp. melted butter or vegetable butter
- 1/2 squeezed orange
- 1/3 cup Brown Sugar
- 1 tsp vanilla extract
- 1 cup unsweetened applesauce
- 3/4 cup small diced apples
- 3/4 cup grated carrots
CRUMBLE (optional)
1/2 cup Butter or vegetable butter
1/2 cup Brown Sugar
1/3 cup small apple cubes
1 cup Large flake oats
Orange zest
Add to muffins before baking and add 1 or 2 chocolate covered cranberries.
