Yield : Makes 12 cookies!
INGREDIENTS
- 1 1/2 cups unbleached all-purpose flour
- 1/2 tsp Baking powder
- 1/2 cup brown sugar
- 1 orange - Finely grated zest
- 2 tbsp. Orange juice
- 1/4 cup Mini chocolate chips
- 1/4 cup Nutra-Fruit Less Sugar Cranberry
- 1 egg or 1 tbsp. chia seeds diluted in water
- 1/2 cup semi-salted butter, softened or vegetable butter
PREPARATION
- Preheat oven to 190°C (375°F).
- Line two cookie sheets with parchment paper.
- Mix flour and baking powder in a bowl. Set aside
- In another bowl, cream the butter with the brown sugar and orange zest using an electric mixer.
- Add the egg and mix until the mixture is smooth. Stir in the dry ingredients and orange juice.
- Add the less sugar cranberries and the mini dark chocolate chips.
- Shape about 1 tbsp of dough into balls and place on baking sheets, spacing them apart.
- Bake for 10 to 12 minutes or until the edge just begins to brown.
- Let cool completely on the plates.
