INGREDIENTS

  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 tsp Baking powder
  • 1/2 cup brown sugar
  • 1 orange - Finely grated zest
  • 2 tbsp. Orange juice
  • 1/4 cup Mini chocolate chips
  • 1/4 cup Nutra-Fruit Less Sugar Cranberry
  • 1 egg or 1 tbsp. chia seeds diluted in water
  • 1/2 cup semi-salted butter, softened or vegetable butter

PREPARATION

  1. Preheat oven to 190°C (375°F).
  2. Line two cookie sheets with parchment paper.
  3. Mix flour and baking powder in a bowl. Set aside
  4. In another bowl, cream the butter with the brown sugar and orange zest using an electric mixer.
  5. Add the egg and mix until the mixture is smooth. Stir in the dry ingredients and orange juice.
  6. Add the less sugar cranberries and the mini dark chocolate chips.
  7. Shape about 1 tbsp of dough into balls and place on baking sheets, spacing them apart.
  8. Bake for 10 to 12 minutes or until the edge just begins to brown.
  9. Let cool completely on the plates.
